Griddled Cheese Cakes

Ingredients
- 48 Kellogg’s Eggo Buttermilk Pancakes
- 48 slices Cooked sliced bacon
- 24 slices Cheddar cheese
- 24 slices mozzarella cheese
- ½ cup Butter
Directions
1. Lay half of the pancakes on work surface and top with 2 slices of bacon each.2. Place a slice of cheddar and mozzarella cheese over top. 3. Top with remaining pancakes.
4. Heat half the butter in a non-stick skillet or griddle over medium low heat.
5. Add sandwiches in batches and cook, for about 2 minutes per side until cheese begins to melt.
6. Add more butter as necessary.
