Jamaican Jerk Style Black Bean Bowl

Ingredients

  • 4 lb (2 kg) brown rice
  • 24 Morningstar Farms* Spicy Black Bean Burgers
  • 2 cans (19 oz/540 mL each) pineapple chunks
  • 5 lb (2.5 kg) peeled, diced and steamed
  • 1 bag (14 oz/397 g) shredded
  • ⅔ cup (150 mL) prepared Caribbean Jerk marinade or Thai Sauce

Directions

1. Divide 20 cups (5 L) of water and brown rice among two 2-inch (5 cm) deep steam table pans. Steam for about 25 minutes; fluff and keep warm.
2. Meanwhile, place Morningstar Farms* Spicy Black Bean Burgers patties onto parchment paper-lined sheet pan and bake in 400º F oven for 15 minutes or until internal temperature is 135º F (57º C). Dice and keep warm.
3. Drain pineapple chunks, reserving juice. Measure out ⅔ cup (150 mL). Whisk together Jerk marinade and pineapple juice; set aside.
4. Combine burgers, sweet potatoes, pineapple chunks and toss with marinade mixture to coat.
5. Serve ⅔ cup (150 mL) of rice onto each serving dish and top with 1 cup (250 mL) of the Morningstar Farms* Spicy Black Bean Burger mixture. Top with about 1/4 cup (60 mL) of coleslaw and a generous tbsp (15 mL) of peanuts. *© 2023, Trademark used under licence
