Ingredients
- 1 1/2 lb (680 g) Bean thread or rice vermicelli noodles
- 24 Gardenburger* Malibu burger patties
- 1/4 cup (60 mL) Vegetable oil
- 2 cups (500 mL) Thinly sliced onions
- 2 tbsp (30 mL) Grated fresh ginger
- 4 cloves Garlic, minced
- 1 lb (454 g) Matchstick carrots
- 1 1/2 cups (375 mL) each Thinly sliced green and red bell peppers
- 1/2 cup (125 mL) Chopped fresh cilantro leaves
- 1 cup (250 mL) Packed brown sugar
- 1/2 cup (125 mL) Sodium reduced soy sauce
- 1/2 cup (125 mL) Water
- 2 tbsp (30 mL) Sesame oil
- 1/4 cup (60 mL) Minced fresh garlic
- 1 tbsp (15 mL) Grated fresh ginger
- 1 tbsp (15 mL) Red pepper flakes (crushed chilies)
Directions
1. Spicy Sesame Sauce: Whisk together sugar, soy sauce, water, sesame oil, garlic, ginger and red pepper flakes. Bring to a simmer and cook about 5 minutes or until sugar dissolves. Remove from heat and set aside.2. Break noodles into 2 inch (5 cm) pieces. Place in large bowl and pour boiling water over top and let stand for 5 minutes to soften. Drain well.
3. Meanwhile, place Gardenburger* Malibu patties onto parchment paper-lined sheet pan and bake in 400º F oven for 10 to 15 minutes or until internal temperature is 165º F (74º C). Dice and keep warm.
4. Heat oil in a large saute pan or wok over medium heat. Stir fry onion, garlic and ginger for 2 minutes. Add carrots and peppers; saute for 4 minutes. Add diced Gardenburger* Malibu patties, noodles, cilantro and reserved sesame sauce. Cook until heated through before serving.
Tip: To reduce the heat in the sesame sauce, reduce red pepper flakes to 1 tsp (5 mL).
